Ingredients:
4 fish fillets- cod or Tilapia, 1 tsp. salt, 1 cup flour, 2 Tbsp. vegetable oil, 2-3 Tbsp. olive oil.
For the Chermulla sauce:
4 garlic cloves, chopped, 2 tsp. cumin, 1/4-1/2 tsp. black pepper, 2 Tbsp. lemon juice, ¼ cup olive oil, 2-3 Tbsp. Harissa or 2 Tbsp. paprika of your choice, half a bunch of cilantro.
To make:
Wash the fish with cold water and pat it completely dry with a clean kitchen towel. Pat the fish dry with paper towels to ensure it is as dry as possible; this will reduce oil absorption during frying. Heat 2 kinds of oil in a wide pan and fry the fish on both sides until it turns dark yellow to brown. Set aside. Add all Chermulla sauce ingredients to a bowl; mix well.
Drizzle over the fish and serve warm.
